At Pazo de Barrantes we have been tirelessly committed to the pursuit of excellence since 1511, the driving force behind our daily dedication and the result of the patience and know-how of a team that always strives for the highest quality and uniqueness.
After years enjoying Pazo Barrantes, the result of an extraordinary terroir and a careful and well-balanced winemaking process, our devotion to the albariño grape led us to take a risky decision: to withdraw it from the market for two years to give the wine a more gentle ageing, a small addition of acacia barrels, a later bottling and a longer time in bottle to develop the new Pazo Barrantes.
Ten years of research and thorough work in the vineyard to optimize the quality of the grapes have been necessary to complete this project, which was born with the 2019 vintage and was the beginning of the new era of Pazo de Barrantes.

The grapes used to produce the wine come from Pazo de Barrantes estate, which spans 12 hectares divided into eight different plots located around the winery in the Salnés Valley. The estate´s soils are granitic, with sand on the surface and the average age of the vineyard is 40 years.
The harvest was carried out in 20 kg crates from September 18 to 28, 2021.
After an exhaustive selection, the grapes are destemmed and pressed gently and slowly in a pneumatic press. The must is clarificated by flotation to ensure greater aromatic purity and then fermented at 10°C in stainless steel tanks for approximately 30 days. After fermentation, it remains 3 months with the fine lees in the stainless-steel tank.
6 months in stainless steel tanks and approximately 15% in 225 l acacia wood barrels.
Roasted ginger lobster, lemon verbena ravioli and green asparagus yolk purée; scarlet shrimp royale with red curry, artichoke and apple and celery sour hint; white truffle and foie gras rice, poulard sauce and Chantecler apple; fluid blood orange soufflé with Pazo Barrantes, raspberry and redcurrant coulis.

Tasting note
Enveloping nose with intense aroma of nectarine and yellow plum, hints of acacia blossom and fennel on a balsamic background. Vibrant and expressive in the mouth, it reveals the freshness of the vintage on a lively palate that leads to a broad and persistent finish.
