Emerged to open new paths in our historic winery and has been consolidated as a great wine with a unique personality.
Canajas vineyard defines Dalmau and grants its refined character after its ageing in French barrels. Its limited production is determined by the low yields obtained from this exceptional vineyard.
Dalmau 2020
A selection of the best grapes available from our 9-hectare (22 acres) single vineyard called Canajas, located at 465 m altitude and planted in 1950. Its soil is mainly iron-clay with a stony topsoil, which favours optimal ripening. After veraison, crop-thinning is carried out to limit production up to 1 kg per vine, selecting bunches with small, concentrated berries.
Graciano and Cabernet Sauvignon was harvested on September 27 and Tempranillo on September 24.
Once received at the winery, grapes are first de-stemmed and carefully selected. Then, each grape variety ferments separately for around 10 days in 13,900 - litre Allier French oak vats at controlled temperature. During this period, regular pumping over and delestage are carried out to ensure a perfect extraction of polyphenolic compounds.
17 months in Allier French oak barrels and 13 months in concrete vats before bottling.
Selection of national cheeses, pear confit, quince paste, and aguardiente (brandy); low-temperature Landes capon, sweet and sour sauce with aged wine; shaved truffle, Dalmau wine reduction, and red currants.
Grape varieties: 82% Tempranillo, 12% Cabernet Sauvignon, 6% Graciano.
Alcohol level: 14.5% vol.
