Dalmau emerged to open new paths in our historic winery and has been consolidated as a great wine with a unique personality.

Canajas vineyard defines Dalmau and grants its refined character after its ageing in French barrels. Its limited production is determined by the low yields obtained from this exceptional vineyard.


A selection of the best fruit available from the old vines 9-hectare (22-acre) Canajas vineyard, located at 465 meters above sea level, within our 300-hectare Ygay Estate, in Rioja Alta. Its soil is mainly iron-clay, with a stony topsoil, wich favours an optimal ripening. We select bunches with small berries, in order to limit production up to 1 kilogram per vine.

Manually selected harvest done in small crates so that grapes reach the winery as soon as possible and in perfect conditions. The graciano was hand-picked On September 17th, the tempranillo on September 15th and cabernet sauvignon on September 24th, 2017.


Grapes are carefully de-stemmed. Each grape variety ferments separately for 11 days. Tempranillo ferments in stainless steel tanks, graciano and cabernet sauvignon in small oak vats. Pumping over and delestage operations are carried out on a daily basis to favor the contact of the must with the skins and extract the aromas and the phenolic compounds. After fermentation, the solid parts of the grapes are pressed in vertical presses, through a gentle and slow process that favors the extraction of color and ripe tannins that reside in the skin.

The wine is aged for 23 months in 225-litre new french oak barrels from Allier.

Grape varieties: 80% tempranillo, 10% cabernet sauvignon, 10% graciano.

Tasting note

The nose is defined by deep ripe black fruit with hints of black spices, balsamic and mineral aromas. Full-bodied, juicy tannins and endless spicy finish.
